The pumpkin is washed, peeled and put on a large grater.
Put in a saucepan over low heat with half the amount of sugar, the rest of the sugar is added along the way depending on the type of pumpkin and the taste of each.
In 25-30 minutes it should be penetrated and then left to cool.
Warmly mix with breadcrumbs and cinnamon.
For the dough, put half the flour in a bowl, make a place where the yeast dissolves with the sugar and half the warm water. Immediately add the oil, salt, mix well and then the rest of the water and flour until an elastic dough comes out.
I divided the dough into 3 parts and it is prepared immediately, it is not left to leaven.
I greased the table with a little oil and I spread each thin part, I put the filling, I rolled well and I tightened the ends so that the filling did not come out.
I put the 3 rolls in a tray with baking paper greased with oil and I greased them with oil on top.
I baked them in the preheated oven at 180 degrees for about 50 minutes until golden brown.
Leave to cool for 30 minutes then sprinkle with powdered sugar.
